2 ½ lbs. Russet potatoes, peeled, cut into large pieces
4 garlic cloves, peeled
1 cup vegan Chipotle Cheddar, grated
1/2 cup your favorite milk alternative
2 T Chipotle chiles in adobo sauce, diced
2 T Earth Balance
Boil potatoes and garlic in large pot of salted water approx 20 minutes. Drain and return to pot. Mash with potato masher.
Immediately add vegan chipotle cheddar, milk alternative, chiles and earth balance. Mash until smooth and cheese is melted. Season to taste with salt and pepper.
